Dehydration is one of the oldest methods of preserving food. While our ancestors relied on the sun on to dry food, today there are commercial devices and household appliances that can remove the bacteria-forming moisture. This process preserves food much longer than it usually would.
The drying process preserves the original nutritional value of a food product. Research has shown that fresh produce loses its vitamin, mineral, and antioxidant content within a few days of refrigeration – for some nutrients, the loss is as much as 50%.
