Chicory Root Powder

When chicory caramelizes, it takes on a dark brown color. Its traditional bitterness becomes sweet in the process. When used as a coffee substitute, ground, roasted chicory contains none of the caffeine or oils found in coffee beans. It also offers a much higher soluble fiber content and an intense, rich flavor.

History

To avoid coffee imports, chicory was used as a complete substitute. This system lasted only a few years, but the French continued to use chicory to mix with their coffee. This practice migrated to still French-influenced New Orleans and is still considered the normal New Orleans coffee style
